Kabuseru Sencha(かぶせ煎茶) is a premium sencha that is rich in umami and has been shaded for 2 weeks. The shading method used for Kabusencha is direct shading, where the shading material is laid directly on top of the tea plant. The other method is called shelf style shading and is used exclusively for Gyokuro production.
The shading process reduces the sunlight that can reach the tea plant by 50% to 85% this forces the plants to produce rich in chlorophyll and tender tea leaves.
Like all premium Japanese teas, we recommend brewing this delicious treat with low water temperature (50-60°C)
